Char Siu-蜜汁叉燒肉

Chair Siu-叉燒肉
Pork (Shoulder meat) 梅花肉-2lbs
Chair Siu Sauce- 140ml
Cooking wine-half of cup
maltose syrup 麥芽糖-1 teaspoon
1.       Wash the pork and dry it with a paper towel. Cut the pork into 2cm size.
Marinate the meat with Chair Siu Sauce and cooking wine for 1 hr. ( I normally marinated the night before.)

2.       Cook the marinated pork and the marinated sauce in a pot. Fill the pot with ¾ of water. (make sure the meat is covered)
3.       Cook them in high heat until it bubbles, then turn to low heat and cook until the sauce is almost gone.

4.       Add Maltose Syrup. Continue to cook them with medium low heat. Stir the sauce onto the meat. When the sauce is almost absorbed, take them out.
