Chair Siu-叉燒肉
Ingredients:
Pork (Shoulder meat) 梅花肉-2lbs
Chair Siu Sauce- 140ml
Cooking wine-half of cup
maltose syrup 麥芽糖-1 teaspoon
Method:
1. Wash the pork and dry it with a paper towel. Cut the pork into 2cm size.
Marinate the meat with Chair Siu Sauce and cooking wine for 1 hr. ( I normally marinated the night before.)
2. Cook the marinated pork and the marinated sauce in a pot. Fill the pot with ¾ of water. (make sure the meat is covered)
3. Cook them in high heat until it bubbles, then turn to low heat and cook until the sauce is almost gone.
