Stir Fry Beef w/ black fungus

Ingredients:
AAA Beef Flank
Black Fungus
Baby Spinach

Seasoning:
Rice wine
Salt
Chicken stock powder
Soy Sauce
Green onion
Ginger
Extra virgin olive oil

Method:
1. Cut the beef against the grain. Wash the black fungus and soak them in the water until they become soft.  Wash spinach. If the spinach you buy are the big ones, chop them into chunks.
2.Heat the pan and add one teaspoon of extra virgin olive oil. Cook ginger until you can smell them. Add beef into the pan. Quickly, stir them around. When they are 50% cooked, add soy sauce, salt, and rice wine. Add black fungus. Continue to stir them around.
3. Add spinach into the pan. When the spinach is cooked, add chicken stock powder. Stir them around nicely.
4. Serve.

Miso Ma Po Tofu


Ingredients:

Tofu-1 Box (Soft)
Pork Lean Ground Meat-80g
Grind Ginger-10g
Grind Garlic-10g
Paprika-5g
Green onion-10g
Water-100g
Corn starch-1 teaspoon
Sesame oil-1/2 teaspoon

Sauce Ingredients:
Miso-2 big teaspoons
Chili sauce-1/2 big teaspoon
Sugar-1/2 big teaspoon
Salt-some
Chicken Stock-1 teaspoon
Chinese Rice wine-1 small teaspoon

Method:
1. Chop tofu into small chunks. Put them in a small bowl and add boiled water. Soak them for 5 mins.
2. Heat the pan and add the ground meat.  Cook it with high heat(no need to add oil because fat will come out from the ground meat) When it’s 80% done, add grind ginger, garlic, and Chili sauce. Continue to stir them around. (If you find it’s a little dry, you can add 1 teaspoon of olive oil)
3. Turn the heat to medium. Add tofu, paprika, green onion, water and all the sauce ingredients.  Gently stir them around.
4.  Turn the heat to low and add corn starch water. (Before you add the corn starch, make sure they are mixed well. Otherwise, it will becomes chunks)
5.  Add sesame oil at the end
6.  Serve

Stir Fry Five Spices Tofu w/ Chives

Ingredients:
Five spices tofu-1 package
Chives- 5 (You can put more if you want.)
Chilli-1
Chicken stock powder-1 teaspoon

Method:
  1. Chop all the ingredients into chunks. 
  2. Heat the pan and add one teaspoon of extra virgin olive oil. Cook Five spices tofu and chili.
  3. Continue to add Chives. Quickly stir them around.
  4. Add one teaspoon of chicken stock powder. Stir them around.
  5. Serve.

Stir fry beef with onion


Ingredients:
AAA Flank beef 500g (cut them against the grain into small and thin slices. AAA beef is more tender.)
Onion-1 big one
Chili-2

Marinating sauce:
Soy sauce-2 teaspoons
Corn starch-2 teaspoons
Extra virgin olive oil-1 teaspoon

Seasoning:
Salt
Black pepper

Method:
  1. Marinate beef with marinating sauce for 20 mins.
  2. Cut onion into slices and chop chillis
  3. Add one teaspoon of extra virgin olive oil in to the pan. Wait until it's heated, cook beef with high heat. (one way to test if the pan is hot enough is to use a bamboo chop stick to dip into the oil. If you can see the bubbles, it means it's hot enough) Quickly, stir the beef around. Cook until medium rare, then take them out.
  4. Add one teaspoon of extra virgin olive oil and cook onion for 5-6 mins or until they become soft.
  5. Add the chillies and the beef back. Quickly stir them around.
  6. Add salt and black pepper (As soon as the beef isn't red, take them out. Don't overcook beef, they will be tough.)
  7. Serve

Fresh Creamy Mango Drink


Ingredients:

Frozen Mango-2 big ones (remove the skin and seed)
Milk-1 cup
Gina Mango-1 can (I bought it from Loblaws. Many supermarkets carry this type of drink. It's imported from Philippines.)
Vanilla Ice Cream-optional

Method:

1. Blend all the ingredients for 20 seconds.
2. If you want your drink to be sweeter, you can add some vanilla ice cream.
3. Serve.

Method:
1. Blend roasted peanuts first, add icing sugar and continue to blend until them become powdery.

3.  Take one layer of spring roll from the package.


4. Add the peanut sugar powder on the spring roll. Start to add all the ingredients that you like. If you want, you can add some fresh parsley and sweet chilli sauce for more flavours. (sweet chilli sauce can help to seal the spring rolls better as well. You can add them on the edge of the wrap)



5. Roll them and serve. 

Having a spring roll party is a good get together. You can get everyone to wrap their favourite rolls. 

Tip:
1. Make sure all the ingredients are dried after you cook them. So when you roll them, the wrap won't break easily.
2. After you open the package, remember to cover the wraps with a wet towel while you are serving them. Otherwise, the wrap will dry out. (If you are eating this dish in the winter with the heat on, make sure you don't leave the wraps outside for too long, they will dry out quickly. So once you roll them, you have to eat them soon. I am in living in Toronto, it usually gets really dry in the winter.)

Stir Fry Cabbages
Ingredients:
Cabbages-half ( depending on how big you buy)
Grind Garlic
Salt
Sugar

Method:
  • Heat the pan and add one teaspoon of extra virgin olive oil. Add garlic and cook until you can smell them.
  • Add cabbage and stir them around
  • Add salt and sugar.
  • Cook them until the liquid are almost all absorbed
  • Done

Stir Fry Salted Turnip


Stir Fry Salted Turnip
Ingredients:
Salted Turnip-1 bag ( buy those ones that are already chopped)
Grind Garlic
Sugar-a little
White pepper
Red Chili-1
Method:
  • Heat the pan and add one teaspoon of extra virgin olive oil. Add grind garlic and chili, cook them until you can smell them. 
  • Add salted turnip. Cook it until you can smell them. Then, add sugar and white pepper.
  • Done

Scrambled Eggs



Scrambled Eggs
Ingredients:
Eggs-8
Salt-some
White pepper-some

Method:
  • Mix the eggs and add a little rice wine and add salt and white pepper. Mix them all together.
  • Pour the eggs through a fillter.
  • heat the pan and add 1 teaspoon of extra vrigin olive oil. Pour the eggs into the pan  and cook it with low heat. When you see it starts to bubble, flip them around to another side. Continue to cook them until they turn golden yellow color
  • Cool them down. Cut them into long strips.
  • Done

Sir Fry Carrot


Sir Fry Carrort
Ingredients:
Carrort-1~2 ( depending on how big you buy)
Salt-some
Sugar-some
White pepper-some

Method:
  • Peel the skin of the carrorts and cut them into threads.
  • Heat the pan and add 1 teaspoon of extra virgin olive oil. Add carrorts threads in to the pan.
  • Add some water and cover the lid. Cook until carrorts turn soft.
  • Add salt, sugar and spary some white pepper
