Chicken Rice 嘉義雞肉飯



Ingredients #1
Ground pork-1.5 pounds
Fried garlic-2 table spoons
Fried red onion-2 table spoons
Soy sauce-half cup
Crystal sugar -2 tsp
Rice wine-1 table spoon
Ground pepper -half of tsp
Five spices powder-1 tsp
Water-1 cup

Ingredients #2
4 pieces of chicken breasts (or whole chicken)

Method:
1. Steam the chicken until they are cooked. 
2. Peel the chicken into pieces
3. Cook ground pork in a pan until it’s half done. 
4. Add the rest of the#1 ingredients to the pot and continue to cook.
5. When the ground pork is cooked, pour the chicken to the pot.
6. Serve with rice

Tomato and Chicken 番茄雞


Ingredients:
Chicken breast or Boneless chicken leg-2
Tomato-2
Grinded Garlic-1small teaspoon

Sauce ingredients A:
Salt-1/2 small teaspoon
Corn Starch-1small teaspoon
Sauce ingredients B:
Cooking wine-2 small teaspoon
Soy Sauce-2 small teaspoon
Sugar-1/2 small teaspoon
Red vinegar-1/2 small teaspoon
White pepper 1/2 small teaspoons
Sesame oil-1 small teaspoon
Chili or hot bean sauce 豆瓣醬 1 small teaspoon

Method:
1. Chop tomato into small pieces.

2.Chop chicken into small pieces. Marinate with sauce ingredients A for 30 mins.

3.Heat the pan, add 1 teaspoon of extra virgin olive oil. Cook marinated chicken. When they are cooked, take them out.

4.Continue to cook grinded ginger ( if not enough oil, add 1 small tea spoon). When you can smell ginger, you add tomato. Quickly  stir fry them, then add sauce ingredients B and then Chicken. Stir them all together.
      5.Serve

Stir Fry Chicken Shrimp Snow Pea


Ingredients:
Chicken breast-1
Shrimp -12
Snow Pea-1 box
Garlic-1

Marinating sauce:
Soy sauce- 2 teaspoons
Mirin-2 teaspoons
Cooking wine-1 tea spoon

Method:
1.      Wash chicken breasts and dry with paper towel.
2.      Chop Chicken breasts into small pieces
3.      Take off shells of the shrimps and wash them with cold water
4.      Marinate chicken and shrimps with Marinating sauce for 30mins
5.      Remove the roots of the Snow Peas. (As the pics show)
6.      Heat the pan, add 1 tea spoon of extra virgin olive oil. Cook garlic until you can smell it. And then cook chicken and shrimp with high heat. When they are 90%done, add Snow Peas.
7.      When the Snow Pea turns bright green color, taste the flavor to see if it’s salty enough.
8.      If not, you can add a pinch of salt.
9.      Serve

Chicken W/ Cabbage-碎米雞丁

Ingredients:
Chicken breast-1piece
Cabbage-half
Peanuts (cooked and peeled) 140g
Grind ginger -1 teaspoon
Chinese Chili bean sauce(辣豆瓣醬),-1 big teaspoon
Red chili-1
Grind Parsley-1 big teaspoon

Sauce ingredient:
Sugar- 1 tea spoon
Sesame oil- half tea spoon
Corn starch mix with water-2 big teaspoon
Vinegar-1 teaspoon

Marinating ingredient:
Egg-1
Soy sauce-1 big teaspoon
Corn starch-1big teaspoon
Salt (1 pinch)
Cooking wine (half teaspoon)
Pepper powder (1 pinch)
Method:
1. Wash chicken breast and dry them with paper towel. Cut them into small pieces
2. Marinating them with “marinating ingredients for 20 mins.
3. Chop red chili to small pieces.
4. Heat the pan, add 1 tea spoon of extra virgin olive oil. Put chicken breast pieces into the pan and cook them until they turn white.
5. Add Chinese Chili bean sauce(辣豆瓣醬),then when you can smell the spice, you add grind ginger and red chili and cabbages into the pan.
6. At the end, add sauce ingredients and stir
7. Turn of the stove, and add peanuts and parsley
8. serve

Black Pepper Chicken W/Onions 洋蔥胡椒雞柳

Ingredients:
Onion-half
Chicken Breast-1/2 piece
Grind Garlic-10g

Marinating sauce:
1. Salt-a little
2. cooking wine-a little
3. Corn starch-a little

Cooking sauce:
Salt-1/4 teaspoon
Chicken Stocks1/4 teaspoon
Black Pepper-a little
Chili sauce-1 teaspoon

Method:
1. Wash onion and chop it into small pieces
2. Wash and cut chicken breast into small pieces.
3. Marinating the chicken breast with Marinating sauce for 15mins
4. Heat the pan and add one teaspoon of extra virgin olive oil, and then cook chicken until they turn white. Then, take them out.
5. Wash the pan and then heat the pan again. Add 1 teaspoon of extra virgin olive oil, cook the grind garlic and onions. When you can smell them, you add the chicken back and the cooking sauce.
6. serve

Bread with Chicken stuffing

Bread with Chicken stuffing

Ingredients:
1 loaf of bread ( so that you can slice it to the size you need)
Chicken breast –Half ( you can add seafood, such as shrimps or squids)
Carrot -15g
Green pees 15g
Potato 20g
Onion 20g
Mushroom 30g

Sauce ingredients:
Salt
Pepper powder
Cooking wine ( optional)
Corn starch
White sugar
Milk
Butter

Method:
1. Chop Carrot, mushrooms, onion, potato, chicken breast into small pieces.
2. Marinating Chicken breast with cooking wine, salt, pepper powder, corn starch for 10 mins.
3. Slice The loft of bread to the size you want, depending on how much stuffing you want to put in there. Bake it with 350 degree. Each side for 5 mins. Or until they change to golden color. Cut a small square in the middle and dig the bread out. Keep the cover part.
4. Heat the pan and add 1 tea spoon of extra virgin olive oil. Then, cook the marinated chicken. When it’s done, take it out.
5. Leave some oil in the pan, continue to cook carrot, mushrooms, onion, potato.
6. Add the chicken back
7. Add some chicken stock powder or soup.
8. Add milk & butter
9. Mix corn starch with water and add into the pan
10. At the end, add salt and pepper
11. Pour them into the bread , & put cover on top
12. serve

Cashews w/ Chicken-腰果雞丁


腰果雞丁 Cashews w/ Chicken
Ingredients:
Chicken breast 2
Cashews 150g
Garlic 2
Green onion 1
Salt
Marinating ingredients:
Sugar 1 small teaspoon
Salt 1 small teaspoon
Corn starch half of teaspoon
Egg white (half)
Cooking wine 1 big teaspoon
Method:
1. Wash the chicken breasts and then cut them into small pieces.
2. Marinate them with “marinating ingredients” for 20 mins.
3. Wash the green onion and chop it into 5cm pieces and slice the garlic
4. Heat the pan and add about 5 big teaspoon of extra virgin olive oil
5. Cook the chicken with high heat until the color change
6. Take the chicken out
7. Leave a little bit oil in the pan. cook the garlic and green onions. When you can smell them, you add the chicken and cashews
8. Add salt
9. Serve

Kung Pao Chicken-宮保雞丁


kung pao chicken
Ingredients:
Boneless chicken thigh... 2-3 pieces
Dry chilies................5-6 pieces
Garlic..................... 3
Cooked peanuts half cu p

Marinating ingredients:
Rice wine 1 big teaspoon
Soy sauce 1 big teaspoon
Corn starch 1 big teaspoon

Sauce ingredients:
Soy sauce 2 big teaspoon
Rice wine 1big teaspoon
Sugar 1 big teaspoon
Corn starch 1 teaspoon (mix with 1 big tea spoon of water first)

Method:
1.Cut boneless chicken thigh into 1cm and then marinate with “marinating ingredients for 30 mins. Mix all the “sauce ingredients”, chop dry chilies and garlic
2.Heat the cooking pan and put the chicken in until it’s cooked , then take them out first
3.Add 1 tea spoon oil, cook dry chilies and garlic with the low heat
4.When you can smell the garlic and chilies, then you put in the chicken.
5.Add “sauce ingredients” and cook them until it’s almost dry
6.Add peanuts and quickly stir them
7.Serve

TAIWAN SNACKS-POPCORN CHICKEN-台灣小吃-鹹酥雞

TAIWAN SNACKS-POPCORN CHICKEN
Ingredients:
1 boneless chicken breast
Sweet potato powder (thick) 100g
Fresh Basil ( You can skip it if you want)
Marinating ingredients:
Grinded garlic 40g, soy sauce 1 big teaspoon, Chinese cooking wine 1 big teaspoon, sugar 1 teaspoon, sesame oil 1 teaspoon, salt 1 pinch, Chinese five spices powder ¼ teaspoon, white pepper 1 teaspoon, and cinnamon powder 1 teaspoon.

Method:
1. Cut the chicken breast into 2cm pieces. Marinating them with the “marinating ingredients” for 30 mins.
2. Coat the chicken breast with sweet potato powder
3. Fry them until it turns into gold colour (make sure the oil is hot enough. One way to test is to use a bamboo chopstick and put it in there. If it’s bubbling, it means it’s hot enough.)
4. Fry fresh Basil for 10 seconds and mix it with the popcorn chicken.
5. Sprinkle white pepper and chilly powder on the fried popcorn chicken.

If you want really crunchy popcorn chicken, you can fry them again after taking them out of the pot for 1 min.
