Taiwanese Spicy Beef Noodles 台式麻辣牛肉麵


Ingredients:
Beef Shank-2 pounds (I use 1 lb beef shank and 1 lb ox tail)
Onion-2 large ones
Tomatoes-2 large ones
Ginger-3 slices
Green onion-2
Rice wine- 1.5 cups
Soy sauce-half cup
Chilly bean sauce-3 table spoons
Chilli-1
Sesame oil- half tsp
Rock Sugar-1 table spoon
Ground black pepper-half tsp
Water- enough to cover all the ingredients

Method:
Prepare put all the ingredients above in a slow cooker.
Cook them in high heat for 4 hours
Serve with noodles

Chicken Rice 嘉義雞肉飯



Ingredients #1
Ground pork-1.5 pounds
Fried garlic-2 table spoons
Fried red onion-2 table spoons
Soy sauce-half cup
Crystal sugar -2 tsp
Rice wine-1 table spoon
Ground pepper -half of tsp
Five spices powder-1 tsp
Water-1 cup

Ingredients #2
4 pieces of chicken breasts (or whole chicken)

Method:
1. Steam the chicken until they are cooked. 
2. Peel the chicken into pieces
3. Cook ground pork in a pan until it’s half done. 
4. Add the rest of the#1 ingredients to the pot and continue to cook.
5. When the ground pork is cooked, pour the chicken to the pot.
6. Serve with rice

焦糖鮭魚 Brown Sugar Salmon


Ingredients #1
Salmon- 1 piece (size of a palm)
Soy sauce-1 tsp
Rice wine-1 stsp (you can use white wine or sake)
Salt-half tsp
Black pepper- some         

Ingredients #2
Brown sugar-1 tsp


Method:
1. Put ingredients #1 into a pot and marinate for 30 minutes.
2. Heat the oven to 400F
3. Place salmon on a baking tray. And pour the marinating sauce on top
4. Spray ingredients #2 on the salmon

5. Bake 15 mins

Banana Cake 香蕉蛋糕

 


 

Ingredients:
4 medium banana
2 eggs
100g unsalted butter
Half cup all purpose flour
Half cup multigrain flour
1 cup sugar
2 tsp baking soda
1 tsp cinnamon powder
Half tsp salt
2 table spoon baking powder
1 tea spoon vanilla extract

Method:

1. Mix all the dry ingredients
2. Peel banana and use a spoon to smash them.
3. Mix banana, eggs, and vanilla and then add the dry ingredients.
4. Add butter, continue to mix until they are ready to bake
5. Bake at 350 degree for 45 mins



You can also make it with an Instant Pot. Hit manual -45 mins. When it's done, release the air.

Stew Beef (Cooked with a slower cooker) 蔬菜牛肉湯


Ingredients:
2 pounds beef shank meat, (cut into bite-sized pieces)
1 tsp Salt
1 tsp pepper
1 medium onion, finely chopped
2 celery ribs, sliced
2-3 cloves of garlic, minced
150 ml can tomato paste

3 table spoons of chicken stock
4 cups of water
2 cups carrots
5 small red potatoes ,cut into bite-sized pieces
1 tablespoon dried parsley
1 teaspoon oregano
1/4 cup flour
1/4 cup water


Directions:

  1. Combine beef, celery, carrots, red onion, potatoes, salt, pepper, garlic, parsley, oregano, chicken, 4 cups water, and tomato paste in the crock pot. I used a 5 qt crockpot for this stew.  Cook on LOW for 10 hours or on HIGH for 6-7 hours.
  2. (Optional) Before serving, mix the flour and the water together in a small dish and pour into the crockpot. Mix until well combined. This will add a nice thickness to the stew.

Eggplant Lasagna 茄子千層麵 (沒有加麵)




Ingredients:
1 teaspoon olive oil for brushing
2 eggs
2 tablespoons water
1 cup grated Parmesan cheese
1 cup Breadcrumbs
Salt and ground black pepper to taste
2 large eggplants sliced into 1/2-inch rounds
2 tablespoons olive oil
1 pound ground meant (half beef  and half pork)
Tomato paste-300ml
4 cups shredded mozzarella cheese

  1. Preheat oven to 375 degrees F. Oil 2 baking trays with 1 teaspoon olive oil.
  2. Whisk eggs and water together. Combine Parmesan cheese, bread crumbs, salt, and ground black pepper in a bowl.
  3. Spread a quarter of step 2 on to the tray. Spread eggplant slices on top. Then spread another quarter of step 2 to the tray. 
  4.  Bake for 45 mins.
  5. Cook ground meat in a pan for 10 mins.  Add black pepper and salt and tomato paste.
  6. Put half of step 5 into 1 of the trays.  Add mozzarella cheese.  Do the same for the 2nd tray.
  7. Heat oven to 400 F.
  8. Bake for 15 mins.

Apple Beef Stew 滷頻果牛肉

Ingredients:
  • Beef shank 2 lbs. Chop them into small pieces)
  • 8-10 tomatoes (you can use 4-5 tomatoes but you will have to add the water for it to cover the meat when you stew)
  • One onion
  • One Apple
  • Shao Shing  cooking wine ( 1 cup)
  • Garlic 5 cloves
  • soy sauce - half cup  ( you can mix different kind of soy sauce such as soy paste, black bean sauce thick/thin  to give more flavours )
Method:

1. Cook the beef in boiling water. When the color changes,take them out. Then rinse with water  (Cleaning process)
2. Heat a pan, add oil, cook chopped garlic, onion and Apple. When you can smell the onion and garlic, add cooking wine and soy sauce. When it starts to boil, turn it to low heat and cook it for two hours
3. Serve with rice , noodles or bread
